Beat the Heat, Day 3

Black Bean Tacos (Microwave)

Corn tortillas
1 can Black beans, drained
cumin
coleslaw
feta
green onions
cilantro
olive oil
hot sauce
avocado chunks (optional)
sour cream (optional)

Heat tortillas in microwave in tortilla warmer. Prep beans, add cumin and microwave for 2 minutes. Mash beans and spread on tortillas. Top with coleslaw, feta, onions, cilantro and drizzle with olive oil and hot sauce. I realize taco shells are pictured, but this is easily made with corn tortillas or flour if you prefer.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
