Blackberry Pancakes

What is breakfast without pancakes?

We have a blackberry bush, that is producing like crazy this summer so what better way to get your daily intake of fruit than to add it to pancakes.

Start with your favorite pancake mix, we used Hungry Jack's Complete Wheat Blends Pancake and Waffle mix, add water as directed or we've added yogurt instead and it is might tasty. Add smashed blackberries and cook.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
