Game Night Recipes

Starting a game night with friends.
We are the January hosts. So it's dealer's pick!
We are playing BUNCO, and I'm serving up some pastas.

Buffalo Chicken Pasta
(If you like Buffalo chicken dip, you'll love this!)
1 lb. penne, prepared
1/2 C Franks red hot sauce
1 C blue cheese dressing
2 cups diced chicken (I used shredded rotisserie chicken)
1/2 C green onions, chopped
1 1/4 C shredded cheddar
1 1/4 C shredded colby jack

Prepare pasta, drain and set aside. Preheat oven to 350 degrees. Mix together hot sauce and dressing add chicken, 1 C of each cheese and onions.  Place in a 13x9 inch pan and top with additional 1/2 C of cheeses. I also topped mine with a light sprinkling of Italian breadcrumbs.
Bake 25-30 minutes or until hot and bubbly.

I also made a Four-Cheese Baked Ziti, but I'll post that later.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.

Fast Food Fries

It's a fast food dinner kind of night, sometimes nothing is better than a large order of fries. It will cure what ails you. So what's your favorite fast food fries???
