Crazy for Coconut



Almond Coconut Cookies

1 package Betty Crocker's Chocolate Chip Cookie Mix
1/2 C Organic Extra Virgin Coconut oil
2 eggs
1 C sweetened coconut flake
1/2 C slivered almonds

Preheat oven to 350 degrees. Mix all ingredients. Place by rounded tablespoons onto non-stick cookie sheet. Bake 10-12 minutes or until browned. Yields 2 dozen.

These are so good, 
and they taste like an almond joy!

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!
