Fa La La La Leftovers

Thanks to my office Christmas Party and restaurant leftovers the hubs and I got creative with dinner. And we had a Top Chef challenge set to Jock Jams!
"Let's get ready to rumble..."
(our bellies!)

So with the restaurant leftover mushrooms, I came up with Mushrooms on toast

Saute mushrooms and onion. Butter French bread, place butter side down in skillet. Spread Dijon mustard on bread and top with mushroom and onion mixture. Top with shredded Parmesan, mozzarella, parsley, and smoked paprika. Grill until cheese melts and toast is browned.

And with leftover pulled pork the hubs came up with
Pulled Pork Open Faced Sliders

Slice slider buns. Place shredded pork on half of bun. Top with BBQ sauce and coleslaw.

How momma got her (blog) groove back!

Yeah, I've taken a long blog sabbatical. But, it is time to get back at it. Let's face it being a mom is hard work and being a first-time mom is even harder. So, if baby boy goes to bed before midnight haha I'll use my precious spare time to pour a glass sit back and whine  a bit!

Whip it Whip it good

Coconut whipped cream It's so good, it only requires 3 ingredients, it's vegan and has none of that artificial garbage. Yes, the can is upside down and yes it is necessary. It probably wasn't necessary to take a picture of it upside down, but it's funny so there! 1 can of full fat coconut milk, chill in fridge overnight 2 tsp sugar  1/2 tsp vanilla Put your mixing bowl and beaters in the freezer for 5 minutes. Open coconut milk upside down, pour out the liquid and save for another use. Scoop out the cream and add to chilled bowl. Whip with electric mixers or a Kitchenaid mixer with paddle attachment. Add sugar and vanilla. Continue to whip until light and fluffy. Use this like cool whip, I even used it to make a layered oreo dessert it was delish!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
