Keri's Kickasserole

1 Tbsp Vegetable oil
1 large onion, chopped
1 pkg frozen tator tots (or use any flavored tator tots)
1 can cream of mushroom soup
1 C sour cream
1 stick butter, melted
2 C sharp cheddar cheese, shredded
season to taste
3 C sour cream and onion potato chips, crushed (or use cheesy garlic bread chips for variation)

Preheat oven to 350 degrees. Grease a 9x13 inch pan.
Heat oil over medium and saute onion for 5-7 minutes or until softened. In a large bowl, mix tator tots, soup, sour cream, butter, cheese and seasonings. Add in onions, stir until well combined. Put mixture into 9x13 inch pan. Top with crushed chips.

Bake for 45-60 minutes. Top will be golden brown

This always requested casserole is my go-to dish.
It's perfect for any holiday and it is great for a potluck and kids of all ages love it!

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
