Thirsty Thursday

From Cocktail to Mocktail...

I love martinis, not the kind with olives or gin,
but the fun and fruity kind.

My favorite to make at home is called a
Wedding Cake Martini

1 Martini shaker fill half way with ice cubes
1 6oz can Dole Pineapple Juice
1 Shot Malibu
1/2 Shot Vanilla Vodka
1 tsp Grenadine syrup

Start with filling up your shaker half way with ice.
Add juice, malibu, vodka and grenadine.
Shake well. Serves 2.

Now on to the mocktail version. The original is so yummy, but I wanted to a make a version that was lower in calories and alcohol-free.

1 Shot Coconut Water, my fave is SoBe
2 tsp Sugar-free Vanilla Syrup, like the kind in the coffee aisle.
1 tsp Grenadine syrup

Start with filling up your shaker half way with ice.
Add juice, coconut water, vanilla and grenadine.
Shake well. Serves 2.

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.

Fast Food Fries

It's a fast food dinner kind of night, sometimes nothing is better than a large order of fries. It will cure what ails you. So what's your favorite fast food fries???
