Classic baked potato

The past week has been so crazy. Since going out of town and having a sick hubby and trying to get back into the swing of work, I'm kinda worn out.
I need to take time and get caught up on my blog.

So for dinner last night I went with just a simple baked potato.

Scrub potatoes, dry and rub with olive oil and dust with sea salt and coarse black pepper.
Preheat oven to 400 degrees. Place potatoes directly on oven rack and bake for about an hour.
These were so yummy. Soft on the inside with a crispy salty exterior! Topped with some butter, sour cream, green onions, cheese and bacon if you are that kinda girl, but I'm not I prefer some smoked paprika and a quick twist of the pepper grinder.

Dinner is done.

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
