Need for Naan

Who doesn't love Naan?
That yummy tandoori oven-baked flatbread is the stuff dreams are made of, ok well foodie dreams!

I had a couple of loaves of Naan bread and decided to make a flatbread pizza with it. I kept the ingredients simple, I topped it with a Parmesan cheese blend, some parsley, crushed red pepper and garlic, and drizzled the whole thing with decadent truffle oil.
I then baked it in a 400 degree oven for 10-12 minutes.

I say it was quite Gourmet & fancy!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.

Vulgar Bulgur

Tabouli Salad, What a nice and refreshing lunch on this First day of Summer! 1/4 C Cracked Bulgur 1/4 C Green onions 1 Tomato, chopped 1/2 Cucumber, chopped 1 Tbsp Lemon juice 2 Tbsp Olive Oil 1 Tbsp Mint and parsley, chopped Salt and pepper Prepare bulgur per package directions. Add veggies and last 4 ingredients. Stir well. Serve as a light meal or side dish. This can be made with quinoa as well, just substitute it for the bulgur.

Cafeteria Classics-Sloppy Joes

1 pkg veggie crumbles 1/2 C onion, chopped 1/2 C kidney beans 1 pkg sloppy joe seasoning mix 1 6oz can of tomato paste 1 1/4 C of water Brown veggie crumbles, add onion and cook until clear. Add beans, Mix in seasoning, tomato paste and water. Bring to a boil and reduce heat and simmer for 10 minutes. Stir often. Serve on buns with cole slaw if desired.
