Sloppy Joe Tacos

So we made vegetarian sloppy joes the other night and yep they were just as sloppy as the regular kind. The next night the hubs wanted tacos, so I added a can of kidney beans and away we ate! Hmm ok it wasn't the other night it was probably a week ago :-) 1 pkg morningstar farms veggie crumbles, prepared 1 pkt sloppy joe seasoning 1 c water 1 small can tomato paste 1 can drained kidney beans Cook the crumbles. Add seasoning, water and paste. Add beans. Simmer for 10 minutes or until heated through. Serve with your favorite taco toppings.                  

Roq the Guac!

First, of all there is no way to take a pic of guacamole and have it look good. Second, this recipe roqs! What do you get when you mix guacamole with blue cheese...? =Roquamole! I saw this recipe on Nigella Lawson's cooking show and have been in love with it every since. It is so good and a little naughty. Which makes it even better in my book. Make it and bring it to the next party you go to. Believe people were about to start licking the bowl before it ran out. 2 avocados, mashed 1/4 C green onions, chopped 1/4 C pickled jalapenos, chopped 1/2 C crumbled blue cheese or Roquefort 1/2 C sour cream Mash avocados, and mix in remaining ingredients, Serve with tortilla chips or veggies, Or get crazy and put it on your burger or hot dog. Which would make this a roq and roll!

Bachelor Chow

See what happens when I don't cook dinner! The hubs gets really creative with leftovers and reverts to making foods from his bachelor days. I'm not even sure what to call this. I see sausage, pasta, onions, sour cream, and hot sauce. Then he covered it all with cheese and pepper. And seriously is that a carrot? Just trying to describe this dish I was laughing hysterically. What should we call this dish????

Foods I can't believe we ate as children, Part 1

Once upon a time, My parents let my brothers and I eat horrible but wonderful foods or otherwise known as Junk Food! My first memory of junk food, was when I was 5 or 6 and we got a can of Easy Cheese with the air/frosting type pump that you could decorate with. My older bro would write initials on a cracker and I would stand in awe begging him to make a K on mine and he would start to then turn it into a J. Ugh I was so mad! All I wanted was a stinking cracker with some fake cheese and my initial on it in a decorative way. Next came the Tony's frozen pizzas, oh how good  yet terrible they were. We always had pepperoni, because the pepperonis would curl up and get filled with oil. Then we would fight to drink them. SOOOO gross! And then there was...Micromagic! These were pre-packaged frozen items that were supposed to be fast food you make at home. They had burgers, fries and shakes. But and I emphasize BUT... Indulgent Brownies

The hubs and I ate a light dinner last night and then we were starving for something sweet so I whipped up some tasty brownie treats. The recipe I used called for nuts which I didn't have, but I did have a bag of indulgent trail mix from walmart. That stuff is so good it's a mix of chocolate chips, white chocolate chips, peanut butter chips, peanuts, almonds, cashews, golden raisins and dried cranberries. 1 pkg brownie mix or your favorite homemade brownie recipe 1/2 C Indulgent trail mix 1/4 C shredded unsweetened coconut (optional) Prepare mix as directed. Spray a 9x9 inch pan with non-stick spray. Add trail mix, chop if desired and add coconut. Bake at 350 degrees for 25-30 minutes. Let cool if you must and cut into bars.

Taco Thursday-Cheesy Tacos

1 lb. veggie crumbles 1 can cheddar cheese soup 1/2 C salsa cheddar cheese sour cream green onions lettuce tomatoes tortillas hot sauce Prepare veggie crumbles, add cheddar soup and salsa. Cook until heated through. Put in a taco shell or tortilla. Top with your favorite toppings. From fridge to table in less than 20!

Band on the Run

Another spare time hobby is running, my running clinic started last week and we had to kick it off by running a timed mile, ugh. Normally I wouldn't consider this an issue, but since I'm still recovering from bronchitis and a broken baby toe that's healing I wasn't quite ready but like they say ready or not! I've decided that this year I need to come up with a running playlist to last for the entire 10 week clinic and it will motivate me during the 5k as well. So here's my list, It's totally random but I like fast music to run to. I may change it up a little here and there, but most of the songs will stay the same! Tofurky Andouille Sausage + Zatarain's Jambalaya Pasta = Laissez les bon temps rouler! Here's my vegetarian friendly Mardi Gras Dinner Me oh My!!!! and I even got a Mardi Gras name, N'awlins Zulu Nothing like a romantic dinner with the hubs on a Tuesday! Now throw in some True Detective and it's authentic.

March Madness

It's March it's icy, but who I am to complain? I got out of work and running! Now I'm not really one to panic with the threat of bad weather and run to the grocery store. Since I'm sick with bronchitis I did pick up a few things the other day with my rx, like emergen-c and toilet paper. And of course I'm not above taking advantage of some grocery savings. My local grocery store is promoting Kraft's Taco Bell products with a BOGO so I stocked up, I foresee lots of Taco Tuesdays ahead. Take a look at my freebies! I scored about $17 in free foods!
