Spaghetti Sunday

What's better than a fancy spaghetti dinner on a Sunday? Serve it with some crusty garlic bread and a veggie and dinner is done fun again!


1 C of veggie crumbles
1/2 C onion, chopped
1 jar of your favorite spaghetti or marinara sauce, I used a jar with a garden veggie variety.
fresh basil leaves
Parmesan, grated
crushed red pepper
spaghetti or linguine

Heat Saute pan and add veg crumbles and onions. Cook until browned, Add Sauce, basil, red pepper and cook until heated. Prepare and drain pasta. Top pasta with sauce and Parmesan.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
