Crocktober-Simple Veggie Chili

It's October, cooler weather should be on it's way, but it's still over 80 degrees. But that is not going to stop me from pulling out the crockpot and making chili. What makes it even better is that it is only 4 ingredients.

1 pkg veggie crumbles (like the kind by morningstar farms)
1 can diced tomatoes
1 can kidney beans
1 pkt chili seasoning


Mix all in crockpot and cook on high for two hours and 1 hour on low. Serve with your fave chili toppings.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
