Eggplant Fries

Looking for a new fry, give eggplant a try!

1 eggplant, sliced into 1/4 inch pieces
1/2 C flour
2 eggs, beaten
3/4 C breadcrumbs
1/2 C Parmesan
Salt and pepper to taste
1/4 C chopped parsley
1/4 C grated Parmesan for sprinkling

Slice eggplant into 1/4 inch "fry" pieces. Dip in flour, then into beaten eggs. Dredge in breadcrumb and Parmesan mixture. Fry in vegetable oil heated to 375 degrees for about 4 minutes. Drain on paper towels and top with salt, pepper, grated Parmesan and freshly chopped parsley.

Another great way to serve this would be to make a simple eggplant Parmesan. Just top some pasta with the eggplant and top with marinara, mozzarella, and Parmesan.

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
