German Chocolate Brownies

1 pkg German chocolate cake mix
1/2 C of butter, melted
1 egg
1/3 C evaporated milk
1/2 C pecans, chopped
1/2 C chocolate chips
1 C coconut, flaked

Preheat oven to 350 degrees. Grease a 13x9 inch pan with non-stick spray. Mix cake mix, butter, egg, milk and pecans until combined. Stir in choc chips and coconut. Press batter into pan. Bake 20 to 25 minutes or until toothpick inserted into center comes out clean. Let cool completely before serving.

Serve with a scoop of vanilla ice cream and a drizzle of chocolate or caramel syrup.

Kale Yeah!

Oh Kale, when did you become so hipster? But it is pretty darn tasty too. So for dinner we had a nice kale salad 1 C kale, chopped 1 C Spinach, chopped 1/2-1 C Cole slaw blend with carrots 1 can of drained and rinsed white kidney beans 2 Roma tomatoes, chopped 1/2 purple onion, chopped lemon pepper to taste sunflower seeds toss with your favorite dressing So simple and yet satisfying, we completed the meal with a nice piece of buttered bread. YUM!

Peach on Earth

We had our Office Christmas Party the other day and decided on a three ingredient no-fail recipe! It always delivers and rarely leaves leftovers. Peach-BBQ Lil' Smokies 2-14 oz package of Lil' Smokies cocktail sausages 1-16 oz jar of Peach Preserves 1-16 oz bottle of BBQ sauce Put all ingredients into a crockpot, stir and cook on high for 2 hours or low for 4 hours.  Serves 12-15, I would double for larger crowds.
